A meal in Chinese culture typically consists of two or more general components: (1) a carbohydrate source or starch — typically rice, noodles, and (2) accompanying dishes of vegetables, meats, and fish. Meals at Alice's attain a harmony of taste, texture, color and aroma by balancing the Chinese principles of fan and t'sai. Fan foods include rice, noodles, grains and dumplings, while vegetables, meat, poultry, and seafood are t'sai foods.
Rice is a critical part of much of Chinese cuisine. However, in many parts of China, particularly Northern China, wheat-based products such as noodles dominate, in contrast to southern China where rice is dominant. Soup is usually served at the start of a meal and at the end of a meal in Southern China.
Chopsticks are the primary eating utensil for solid foods in Chinese culture, while soups and other liquids are enjoyed with a wide, flat-bottomed spoon (traditionally made of ceramic).
